Strawberry cheesecake parfait

YOU WILL NEED
> Strawberry x 250 g / about 20 pieces of medium sized strawberry
> Sugar x 1 tablespoon
> Icing sugar x 1/3 cup
> Butter, melted x 1 tablespoon
Digestive biscuit, crushed x 1/2 cup, about 8 pieces> Cream cheese x 6 ounces/ 170 g
> Sour cream x 1/4 cup
> Heavy cream x 1/2 cup
>Mint leaf, garnishing (optional)
> wine glasses
> measuring cups/spoons
> whisk
IN A NUTSHELL…
The whole idea is to create slices of strawberry slices, cheese filling and biscuit crumbs which we will layer in wine glasses

1. STRAWBERRY SLICES
Slice strawberry and put into a bowl. Sprinkle with 1/2 tablespoon of sugar. Set aside.

2. BISCUIT CRUMBS
Crush digestive biscuit. Add melted butter and 1/2 tablespoon of sugar into crumbs. Mix and set aside.

3. CREAM CHEESE FILLING
Beat cream cheese with hand mixer until smooth. Add sour cream and icing sugar. Beat until combined.
In another bowl, whip the cream until stiff peaks form. Pour into cream cheese mixture and fold with spatula.

4. LAYERING
Layer cream biscuit, cream cheese mixture, strawberry. Sprinkle the top with some more crumbs and garnish with strawberries and a mint leaf. Refrigerate until ready to serve.
